摘要:
[目的] 总结当前茶叶产地溯源研究进展,为茶叶的产地追溯提供参考,以推动茶叶市场良性发展。[方法] 通过文献检索,从茶叶有机成分(咖啡碱、儿茶素、茶多酚、氨基酸等)及无机矿质元素检测方法和化学计量学应用等方面综述了茶叶产地溯源及其在我国六大茶类中应用的研究进展。[结果] 目前茶叶有机成分的检测方法包括色谱、光谱及电化学方法,以高效液相色谱、近红外光谱、电子鼻、电子舌为主;茶叶矿质元素的检测方法主要包括以电感耦合等离子体为光源的光谱和质谱方法以及稳定同位素法。我国茶叶产地溯源研究以绿茶、黑茶和乌龙茶为主。[结论] 茶叶产地溯源技术联用可提高溯源精确度,对白茶、黄茶以及地理标志产品的产地溯源研究仍有待加强。
Abstract:
[Purpose] To summarize the current research progress on geographical origin of tea, to provide a reference for geographical origin of tea varieties, and to promote the healthy development of tea market.[Method] Through literature search, the research progress of geographical origin of tea was reviewed from the aspects of detecting techniques of tea organic components (caffeine, catechins, polyphenols, amino acids, etc.), tea inorganic mineral elements, chemometrics and applications about six kinds of traditional Chinese tea.[Result] The current detection methods for tea organic components include chromatographic techniques, spectroscopic techniques and electrochemical techniques, specifically, high performanc liquid chromatography, near-infrared spectroscopy, electric nose, and electric tongue. The detection methods for tea mineral elements mainly include inductively coupled plasma-mass spectrometry, inductively coupled plasma-atomic emission spectrometry, and isotope ratio mass spectrometer. Green tea, black tea, and oolong tea are the main objects for study on their geographical origin in China.[Conclusion] The combined application of techniques can improve the accuracy of traceability, and the research on the origin traceability of white tea, yellow tea, especially the tea with geographical indications should be strengthened.
